1 cup oatmeal or unseasoned bread crumbs
3/4 cup Romano or Parmesan cheese finely grated
1/2 cup whole milk
1/2 cup low-sodium beef broth
1/2 cup chopped fresh parsley
3/4 cup Egg Beaters or 3 beaten eggs
2 tbsp dry oregano
1 tbsp garlic minced
1 tbsp kosher salt
1 tbsp black pepper
2 tsp dried basil
1/2 tsp crushed red pepper flakes
1 pinch pinch nutmeg
2 lb. ground turkey
2 cups low-sodium beef broth
Adding the stock at the end kept the meatballs super moist!
Valerie411Almost a year later and we make this recipe at least 3 times a month. We make it into Meatballs, hamburgers (husband won't eat any other hamburger now), and meatloaf.
no01ideaI used a cookie dropper to do the portions. The mixture seemed runny but after cooking in the oven they turned out firm and fabulous. Great recipe, I also substituted milk with rice milk and used only breadcrumbs and no oat. Will definitely do it again.
mmajoliThis is my new go to meatball recipe. The first time I made it just as the recipe states, and it was not runny and made perfect meatballs and were nice and juicy, the second time I read reviews and decided to add more breadcrumbs, and to my family they were a little dry. FYI, makes a GREAT turkey burger (just cook in patty shape in oven).
no01ideaI read the reviews prior to making these and I took the advice of others. I didn't add the 1/2 cup of beef broth to the meatballs but I did add an additional 1/2 cup of breadcrumbs. I did not have 2 lbs of turkey so I made mine 1/2 turkey and 1/2 ground beef. They were fantastic! The entire family loved them. The fresh parsley is a must. It added so much flavor. We will definitely make these again.
