Turkey Tenderloins with Raspberry Sauce

Ingredients

2 (1.25-pound) TURKEY TENDERLOINS (up to 1-1/2 Pounds), sliced in half lengthwise

1/4 Teaspoon Salt

1/4 Teaspoon Black Pepper freshly ground

1 1/2 tbsp olive oil

2 Teaspoons Cornstarch

1/2 Cup cranberry-raspberry juice

1/4 Cup Heinz 57 sauce

1/4 Cup raspberry preserves

1 Teaspoon Fresh Lemon Juice

1/4 Cup sliced almonds toasted

seedless red grapes garnish, as needed

4 Cups cooked wild rice


Directions

Turkey 1. Season turkey tenderloins with salt and pepper. 2. In a medium skillet, heat olive oil. Add turkey and saute on both sides. Cover and continue to cook for 12-16 minutes or until cooked throughout. Transfer from skillet to warm serving platter. Raspberry Sauce 1. Dissolve cornstarch in cranberry-raspberry juice. Stir in sauce, preserves and lemon juice. 2. Continue to cook sauce until thickened, stirring constantly. Service 1. Pour sauce over tenderloins and sprinkle with almonds. 2. Garnish with red grapes. Serve with wild rice.

Enjoyed by all, will pound the tenderloin to a 1/2 inch next time. Raspberry sauce was really yummy, made extra for a dipping sauce for chicken tenders. Nice job, Tyson! Many thanks.
