The Soup and The Southwest

1 Cup Onion chopped
1 Teaspoon olive oil
1 4-oz can green chilies chopped
1 1.25-oz Package taco seasoning mix
1 16-oz can tomatoes undrained
6 Cups TURKEY BROTH or reduced-sodium chicken bouillon
1 10-oz Package frozen corn
2 Cups COOKED TURKEY cut into 1/2-inch cubes
1/3 Cup fresh cilantro chopped
4 Ounces unsalted tortilla chips coarsely crumbled
1/2 Cup Monterey Jack cheese grated
I first tried this with turkey from Thanksgiving and it is amazing! Now I use a whole chicken any time we want Chicken tortilla soup;) Best ever!!!!

LbattoTasty. Easy. Hearty. My husband added a few drops of hot sauce to bring out the Southwestern taste. Best use of left over turkey.
