Vegan Chicken Chowder with Rutabaga and Turnip

Ingredients

1 package (Plain or "naked") diced

1 Medium Diced

1 Medium Diced

1-2 Cups

1 Large Diced

1 1/2 Cartons

2 Tbsp

2 Tbsp (Earth Balance)

2 Tbsp

2 Tbsp

1/2 Tsp

1/2 Cup


Directions

Dice all ingredients that need to be diced. In large pot pour whole carton vegetable broth. Stir in No Chicken chicken base. Add No Chicken chicken, frozen vegetables, rutabaga, and turnips. Bring to boil, turn down heat and allow to simmer while preparing other ingredients. In smaller pot melt butter then add onion and sauté until just starting to brown. Add salt and pepper. Stir in flour and cook for 1 minute, stirring constantly. Add remaining vegetable broth and stir while bringing to a boil. Remove from heat and pour into large pot of vegetables, stirring well. Add parsley and dill and allow to cook until vegetables are tender but still firm. (About 10 minutes). Stir in cream. Serve hot.
