Ingredients

3 tablespoons extra virgin olive oil

1 medium yellow onion finely chopped

1 cup carrots peeled and finely chopped

1 large celery stalk finely chopped

2 cloves garlic minced

1 teaspoon dried oregano

1 teaspoon dried parsley

½ teaspoon dried thyme

¼ teaspoon fennel seeds

2 15-ounce cans navy beans drained and rinsed

4 cups low-sodium or unsalted vegetable stock

2-3 heaping tablespoons tomato paste

1 cup water

2 leaves

2 large Roma tomatoes chopped

1 large zucchini finely chopped

4 cups fresh baby spinach chop 2 cups of it

freshly ground black pepper and sea salt to taste

1/4 cup Parmesan cheese shredded (optional for garnish)
