Veggie Pikelets

Ingredients

1 cup self-raising flour

1 mixed vegetables (finely chopped or grated raw)

1 egg (lightly beaten)

1/2 cup tasty cheese (grated)

3/4 cup milk

1/2 tsp salt and pepper (to taste)

50 g butter

Cream cheese or yogurt to serve (optional)


Directions

1 In a bowl, whisk all ingredients except for butter together. 2 Heat a little butter in a frying pan. Using quarter cup measures, fry each pikelet until golden and turn. 3 Serve warm with cream cheese or yoghurt spread on top.
