Ingredients

1 cup ham diced

1/2 cup Onions diced

1/4 cup Carrot diced

1/4 cup Celery diced

2 tablespoons flour

3 tablespoons Dry sherry

4 cups Chicken broth

2 cups cooked rice

2 cups cooked chicken chopped

2 teaspoon fresh thyme

1 cup Whole milk


Directions

Saute ham in butter in a large pot over medium heat for 3-4 minutes; add onion, carrot, celery. Cover, reduce heat to low and sweat about 5 minutes. Stir in flour to coat vegetables; cook 1 minute. Deglaze with sherry. Add broth, cooked rice, chicken, and seasonings. Bring to a boil, simmer 10 minutes. Finish with milk and scallions. Use box of Uncle Bens Wild Rice.
