WW Applesauce Cake (Weightwatchers)

This is a very good Weightwatchers cake recipe. A wonderful dessert for those of us that are watching calories.

Ingredients

1 cup Water

1 cup Raisins

1 cup Diced dried fruit of your choice

Bring to boil and remove from heat & allow to cool while prepari

2 cup Flour

1 cup Splenda

1 1/2 teaspoon Cinnamon or 2 t Apple Pie or Pumpkin Pie Spice

1/2 teaspoon Nutmeg

1 teaspoon Baking soda

1 teaspoon Baking Powder

1/2 teaspoon Salt

2 whole Eggs (1/2 CUP)

1/2 cup Vegetable oil

1 cup Unsweetened applesauce

1 teaspoon Vanilla

1 cup Nuts


Directions

SPRAY PAN. BAKE ~~at; 325 DEG. 35-40 MIN. 16 SERV. ~~at; 2 POINTS OR 8 SERV. ~~at; 4 POINTS Lease the water remaining with the fruit when adding. This will increase the moisture in the cake. NOTE: If using apple pie or pumpkin pie spice, omit the cinnamon and nutmeg.

This is a very moist cake and my husband really liked it. I did substitute fresh apples for the dried fruit. It was very good. I put a dollop of cool whip on top. I plan on sending it to my friend. I will make it again.

Leave the water remaining with the fruit when adding. This will increase the moisture of the cake. [I posted this recipe.]
