Yogurt Oat Muffins

Ingredients

1 1/4 c flour

1 c oatmeal

1/2 c brown sugar

2 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/4 tsp baking soda

1 egg

1 cup plain low fat yogurt

1/4 cup butter


Directions

Preheat oven to 400 degrees. Mix all dry ingredients in a large bowl with a whisk. In a smaller bowl, whisk the egg, yogurt,and butter together. With a spatula, fold the wet ingredients into the dry ingredients until the batter is evenly moist. Spoon the batter into muffin liners or greased muffin cups and bake for 20 minutes.
