Zucchini and Goat Cheese Pinwheels

Ingredients

4 ounces cream cheese

4 ounces goat cheese

1/2 cup chopped sun-dried tomatoes (packed in oil)

1/2 cup thawed and well-drained frozen chopped spinach

8 fresh basil leaves chopped

1 clove garlic minced

Kosher salt and freshly ground pepper

2 long zucchini thinly sliced lengthwise (use a mandoline if you have one)

I made the same amount of filling for about 1/2 of one zucchini. Definitely think I over stuffed them. I don't know if I'd spread the filling out amongst TWO zucchini's, maybe I'd try 1 next time. Also I didn't have sun-dried tomatoes, so I cut up my tiny cherry tomatoes and added a little flavored garlic olive oil. Next time I would try and cut them up a little more (I had just cut them in half) because it was a little hard to roll up the zucchini with some of the bigger tomato pieces.
