Zucchini "Apple" Pie

This zucchini pie will pass as an apple pie! I had to make it to believe it...my family didn't believe me when I told them it wasn't apple. I used this homemade pie crust recipe. I had never made a pie crust before, and it turned out great! http://www.bigoven.com/recipe/best-pie-crust-ever/168727

Ingredients

4 cups chopped zucchini approx 2 large zucchini

2 tablespoon

1 pinch Salt

1 1/4 cup

1 1/2 teaspoon

1 1/2 teaspoon

1 pinch

3 tablespoon

4 pats


Directions

Peel the zucchini, slice into quarters lengthwise. Remove the seeds, then cut into cubes. Toss together chopped zucchini, lemon juice, and salt. Place in skillet and cook until tender-crisp. In a separate bowl, mix sugar, cinnamon, cream of tartar, nutmeg, and flour. Add cooked zucchini to this mixture and mix well. Place into 9" pie crust, dot with butter, and top with second pie crust. http://www.bigoven.com/recipe/best-pie-crust-ever/168727 Bake at 400 degrees for 40 minutes, until golden brown.
