Zucchini Cheese Casserole

Ingredients

4 medium Zucchini skinned and sliced

2 medium onions chopped

6 medium tomatoes sliced

1 tub low fat cottage cheese

1 teaspoon dried basil

1/2 teaspoon Dried oregano

salt

75 grams Parmesan cheese grated

2 tablespoons oil


Directions

fry zucchini and onion in oil till golden mix herbs with cottage cheese put a layer of zucchini in bottom of oven proof dish then a layer of tomatoes and then some of the cheese mix continue to build this up till these have been used up finnish with a layer of tomatoes and top with the parmazan. Cover with lid or foil and bake in a pre heated oven 350f (180c) for 25-30 mins remove cover for last 10 mins.
