Ingredients

8 c grated zucchini (You’ll need about 4 medium zucchi leave skin on to grate)

1.5 tsp sea salt

1.5 c chickpea flour

3 cloves garlic crushed

5 green onions sliced

2 eggs, beaten

1/2 cup crumbled feta cheese

1/2 c fresh parsley packed then chopped

1/2 tsp pepper

1/2 tsp aluminum-free baking powder

1-2 tbsp olive oil for cooking fritters

Dipping Sauce:

1/2 c plain yoghurt (greek or other)

1 clove garlic crushed

zest of one lemon

1/8-1/4 tsp sea salt to taste
