Abs Diet Mexi Rice

Ingredients

6 ounces Lean ground beef

1/3 cup Onion diced

1 clove Garlic

1/4 teaspoon Cumin

1 3/4 cup Cooked brown rice

3/4 cup Salsa

1 tablespoon Cilantro diced

2 tablespoon Reduced-fat shredded Mexican cheese


Directions

1. Brown beef in a large nonstick skillet preheated over medium heat (about 3 to 4 minutes). 2. Add onion and garlic and saute 3 to 5 minutes or until soft. Drain fat. Add cumin, rice, salsa, and cilantro, stirring to mix well. 3. Reduce heat to low and simmer for 6 to 8 minutes. Top each serving with a tablespoon of cheese.
