Amanda’s Vegetable Soup

Ingredients

16 oz. vegetable broth

4 carrots, chopped

1 onion, chopped

1 green cabbage chopped

1 sweet potato chopped

2 c. dry lentils

1 c. dry beans

Turmeric

Salt

Pepper

Rosemary

Basil

Garlic

Herbs


Directions

In a large pot, add a carton of broth (or water with boulian which is cheaper). Add sliced carrots, onions, celery, cabbage, sweet potatoes, lentils, beans and bring to a boil then simmer. I add tumeric, salt, pepper, rosemary, basil, garlic and pretty much whatever herbs. Sorry that's not much help but the longer the better just be careful not too long otherwise will get mushy. Carrots take the longest to cook out of what I use so if you wanted to you could quickly pan roast them then throw them in first.
