Amy's Easy French Onion Soup

Ingredients

1/2 cup butter

4 cups onion sliced

42 ounces beef broth

2 tablespoons dry sherry

1 teaspoon dried thyme

bread sliced

cheese gruyere, raclette or comte


Directions

Melt butter in 8 qt stock pot on medium heat. Add onions and stir until tender and translucent. Add beef broth, sherry and thyme. Season with salt and pepper and simmer for 30 minutes. Preheat broiler. Ladle soup into oven-safe bowls and tops with bread and cheese. Broil until cheese melts.
