Apple Cider Pork and Vegetables

Ingredients

1 small sweet potatoes peeled, and

cut into 1/2"-slices

1 package dried fruit mix - (6 oz)

1 medium onion sliced thin

1 Bay leaf

3 teaspoon salt

1 teaspoon freshly-ground black pepper

1 teaspoon dried rosemary crushed

1 pounds lean boneless pork cut 1" cubes

1 cup All-purpose flour

2 tablespoon vegtable oil

1 cup apple cider


Directions

Place first 7 ingredients in slow cooker; set aside. Dredge pork in flour and brown in hot oil. Remove pork, reserving drippings in skillet. Place pork in cooker. Add cider to skillet, stirring to loosen any browned particles; pour over pork. Cover and cook on LOW 6 to 8 hours. Remove and discard bay leaf. This recipe yields 4 servings.
