Apricot Glazed Chicken

Ingredients

4 chicken breasts

1/4 cup low sodium soy sauce

2 tablespoons vegetable oil

2 tablespoons cider vinegar

2 cloves garlic minced

1 tablespoons ginger peeled and minced

1/4 teaspoon crushed red pepper flakes

1 teaspoon salt

1/4 teaspoon freshly ground pepper

2/3 cup apricot jam


Directions

1 Whisk together soy sauce, vegetable oil, garlic, ginger, red pepper, salt, pepper and the apricot jam to make the glaze. 2. Pour evenly over the chicken. 3. Grill chicken approximately 6 minutes on each side, basting with leftover marinade until chicken pieces reach an internal temperature of 170. I normally marinade chicken for 1-2 hours prior to grilling.
