Cook in a microwave safe container that will hold 3 times the amount of ingredients, or it will boil over.
Combine sugar, soda, buttermilk and butter. Cover with plastic wrap; punch holes in wrap to allow steam to escape.
Microwave on roast (70%) for 15 minutes.
Stir and continue cooking on roast (70%) for 13-15 minutes until soft ball forms in cold water (or 236 degrees on candy thermometer). DO NOT PUT THERMOMETER IN MICROWAVE WHILE COOKING!
Add vanilla and beat with electric mixer until soft peaks form. Watch closely. Stir in nuts and pour into buttered 8"-square dish. Cool and cut into pieces.
