Aunt Cathie's Mexican Wedding Cakes

These are a wonderful butter cookie with pecans and powdered sugar.

Ingredients

1 lb. powdered sugar plus extra for rolling

1/4 cup Sugar

2 cups Flour

2 cups pecans (or walnuts) chopped

1 cup of Butter

1 tsp vanilla


Directions

Cream butter and sugar Add vanilla Sift flour and powdered sugar together Add chopped nuts Gradually add flour mixture to butter Chill for 1 hour Form into 1 inch balls Place on ungreased cookie sheet Bake at 300 for 20-25 minutes Cool slightly Roll cookies in powdered sugar while still warm.

I made this recipe found the the dough was hard to work with and the cookies are far to sweet.

Make sure to roll the cookies while they are still warm, it helps the powdered sugar to stick to the cookie. [I posted this recipe.]
