Ingredients

For the Mushrooms

1 tbsp olive oil

227 grams baby bella mushrooms

For the Avocado-Spinach Pesto

1 avocado halved pitted and peeled

90 grams baby spinach

1 tbsp raw almonds

2 garlic cloves

1 lime halved

1/4 1/2 tsp sea salt

Red pepper flakes to taste

For Pasta

4 large zucchini

240 g pasta

Garnish

large flake sea salt (optional)


Directions

Saute the mushrooms for 8-12 min. Blend avocado, spinach, almonds, garlic, lime, salt and chilli until smooth. Add the pasta and toss to coat, top with mushrooms and any additional toppings 500 calories / serving
