Ingredients

1 package bacon slices

1 1/4 pounds chicken breasts boneless and skinless

2/3 cup monterey jack cheese sliced

3 teaspoons montreal chicken spice

1 cup presidents choice paprika marinate

3 teaspoons minced garlic

3 slices roasted red peppers


Directions

Preparation: Preheat oven to 375 degrees. Cut chicken breasts down the center and insert cheese slices. Season with Montreal chicken spices. Wrap each chicken breast with bacon and secure with a wooden pick. Dredge wrapped chicken in marinate mixture. Place in fridge 30 mins. In the meantime prepare rice 2 cups in a rice maker. Cooking Instructions Remove chicken and top with minced garlic and roasted red peppers. Place chicken on middle rack and Bake at 375 degrees for 40 to 45 minutes or until bacon is crisp. Serve over rice.
