Bagnet

This is a dressing excellent on boiled potatoes, fish, or raw tomatoes. The recipe is based on one from the cookbook "Marcella's Italian Kitchen", with a spicy twist.

Ingredients

1/2 cup bread crumbs from country-style bread

1/4 cup red wine vinegar

1/2 cup parsley leaves tightly packed

1/2 cup celery leaves tightly packed

1 jalepeno pepper seeds removed (optional)

1/2 tsp chopped garlic

1 hard boiled egg yolk only

3 flat anchovy filets

3/4 cup olive oil

black pepper; freshly ground

salt


Directions

1. Put crumbs, parsely, celery leaves, jalepeno, chopped garlic, egg yolk, anchovy filets and vinegar in the food processor. 2. With the motor running, slowly add olive oil. 3. Transfer to a small bowl and season to taste with salt and pepper. Serve with sliced, boiled potatoes or fish.
