Dip into flour, then egg and fry until golden brown. Drain again on aper towels.
If you choose you can add a slice of Mozzarella cheese to each piece of eggplant.
Place pieces on a 9x13 that has a thin coat of spaghetti sauce on the bottom, Sprinkle grated cheese on each piece.
Add more sauce, but don't cover eggplant.
Cover with foil and bake for about 45 min. at 350
