Baked Eggplant Parmegiano

Can be eaten as is or served warm or cold on a sandwich.

Ingredients

1 Eggplant long,thin and dark

3-5 Eggs depends on size of both.

Add fresh parsley, grated cheese

Salt and pepper add to eggs

Flour

Olive Oil


Directions

Peel and ice of eggplant slice eggplant to about 1/4" thick, Fry in olive oil till dark golden brown. Drain on paper towels' Dip into flour, then egg and fry until golden brown. Drain again on aper towels. If you choose you can add a slice of Mozzarella cheese to each piece of eggplant. Place pieces on a 9x13 that has a thin coat of spaghetti sauce on the bottom, Sprinkle grated cheese on each piece. Add more sauce, but don't cover eggplant. Cover with foil and bake for about 45 min. at 350
