Baked Mushroom Rice

This is a creamy complement to any beef dish.

Ingredients

2 cup uncooked white rice

1 10.75 oz can cream mushroom soup

1 cup vegetable or beef broth

1/2 cup onion chopped

1/2 cup mushrooms chopped

2 teaspoons parsley dried

1 teaspoon oregano dried

1/4 cup butter melted

salt & pepper

2 teaspoons parmesan grated


Directions

1. Preheat oven to 400 degrees F. 2. Butter a large baking dish; place all ingredients in the dish and stir. 3. Cover with a lid or aluminum foil. 4. Bake for 35-40 minutes in preheated oven; if rice is still crispy, add a little water and cook a little longer. 5. Uncover and top with parmesan.
