Baked Potatoes Stuffed with Avocados

Ingredients

1/2 c avacado Diced

Butter

3 Idaho potatoes

2 ts Salt

Black Pepper freshly ground

1 c Sour cream


Directions

from: The White House Chef Cookbook by Rene Verdon 1. Bake the potatoes until done. Half the potatoes lengthwise and scoop out the insides with care. 2. Whip the potato pulp together with sour cream, avocado, salt and pepper. 3. Easy to make and not too heavy. I'm not a big fan of salt so I only put a couple of pinches and used Salmon Spice through out and sprinkled some on top. I also put a slice of Marble Cheese on each of the halves.
