Baked Salmon

Ingredients

1 lb Salmon fillets

1 ts Oregano, dried

2 cl Garlic minced

Black Pepper to taste

1 Tomato thinly sliced

1 sm Onion thinly sliced

2 tb Parsley chopped

1/4 c Dry bread crumbs

1 tb Vegetable oil


Directions

Spray shallow baking pan with non-stick coating. Place fish in baking pan and sprinkle with oregano, garlic and pepper. Layer with tomato, onion and parsley. Mix bread crumbs with oil and sprinkle on top of fillets. Bake at 450 degrees F for 8 to 10 minutes or just until fish flakes easily.

Cooked for friends for a dinner party, served with a Greek salad and Asparagus spears. It’s beautiful! Crust helps to keep the Salmon moist. Great recipe thank you

Excellent recipe. I added thin slices of lemon under the tomato and onion...everyone loved it! Definitely a keeper!

Very good recipe. I used cherry tomatoes because I didn't have tomatoes on hand. Baked perfectly. I think the recipe needs a little bit of a salty dimension so it might help to add capers, Parmesan, or something else with that flavor profile on top. With that adjustment I'd say this recipe is an easy five stars.
