Banana semi-freddo

Ingredients

1 banana

250 ml double cream

50 g caster sugar

1 tsp vanilla extract

2 eggs


Directions

Line a small bread tin with cling film so it overlaps the sides Mash banana Whip cream and vanilla Combine eggs and sugar and beat until thick and pale Combine egg mixture and banana and fold in the whipped cream Pour the mix into the tin and freeze for 3-4 hours or overnight Take out 10-20 mins before serving
