Barley Vegetable Chowder

Ingredients

8 cups broth (or water)

1 cup barley

1 large Potato diced

1 small rutabaga diced

3 stalks Celery sliced

3 Carrot sliced

4 Scallions sliced

1 small bunch Romaine chopped

2 cans white beans

Salt to taste

Pepper to taste

Parmesan cheese optional


Directions

Bring broth and barley to boil. Reduce to simmer. Add potato, rutabaga, celery, carrots. Return to boil then cover, reduce heat, and simmer for 30 minutes. Add beans with their liquid. Add salt and pepper to taste. Cover and simmer 15 minutes longer. Add romaine and scallions. Simmer 2 minutes. Serve with parmesan cheese if desired.
