Basic Spinach Meatloaf

Ingredients

1 pound ground beef 80/20

1 (14 1/2 oz) can spinach drained well - squish out excess

2 large eggs

2 cloves garlic minced or sliced

0.25 tsp cayenne pepper

1/2 cup onion chopped

salt and pepper to taste

8 oz tomato sauce


Directions

Mix all except the tomato sauce together. Form into loaf - I use a perforated roast pan so the grease drains off as it cooks Bake at 350 for about 1 hour Remove from oven and carefully drip half of the tomato sauce over the top Return to oven about 15 mins. Remove from oven and carefully drip the remaining tomato sauce over the top. Try to cover the entire surface. Return to oven about 15 more minutes. Slice into 6 equal slices to serve. Watch cooking times - your mileage may vary.
