BB-red meat with grains

Ingredients

1.5 cups butterhead lettuce chopped or

1.5 cups Spinach or

1 cup Kale chopped

5 large Radishes or

1/2 medium Tomato or

6 medium Cherry tomatoes

3.5 tbsp wild rice dry or

5.5 tbsp bulgur dry or

4 tbsp Plain Couscous dry

1/2 medium Bell pepper

3.5 oz/100g beef filet or

4.5 oz/130g Pork chops or

4.5 oz/130g beef flank steak


Directions

1. Preheat oven to 350°F/175°C. Coat a baking sheet with cooking spray. 2. Place the chosen meat on the baking sheet. 3. In a small bowl, combine salt, pepper, olive oil, lemon juice, minced garlic, and whisk until combined. 4. Brush on or pour lemon juice mixture over the chosen meat coating evenly. 5. Bake in the oven for 30 minutes. 6. Cook grain according to package instructions. 7. Serve cooked meat with chopped leafy greens, chopped vegetables, and cooked grain.
