Heat slow cooker and add Guinness and potatoes. Add stock. Heat frying pan on medium low with some oil in it. Put flour, salt, pepper and Beef in plastic bag. Shake well. Empty all contents of plastic bag into fry pan and begin to brown meat with the flour. Add onion, carrot and celery. Stir well while frying until Beef is cooked to medium and browned. Add entire contents of frying pan, including flour, to slow cooker. The liquids should just cover the dry ingredients - add more Guinness and stock if required. Cook on high for 6 hours or low for 8 or more hours. Stir well, when possible. Serve with crusty bread.

Everyone really liked it. Only negative remark was son thought potatoes soaked up too much Guinness flavor compared to beef. Might try putting potatoes in later in cooking cycle next time.
