Ingredients

1 teaspoon Olive oil

1 pound lean boneless beef round steak cut into 1" cubes

3 cloves garlic minced

.5 teaspoon salt

1 teaspoon pepper

2 teaspoons Garlic powder

3 ribs celery chopped

1 onion chopped

1 Zucchini shredded

3/4 cup barley

1 teaspoon Dried thyme

1 teaspoon Dried oregano

2 quarts reduced sodium beef broth

1 can 10.75 ounce low sodium tomato soup


Directions

1. heat oil in large pot over medium high heat. add beef and garlic and saute 5 minutes, or until beef is browned. 2. transfer to 4 quart or larger slow cooker. Add remaining ingredients and stir to combine 3. cover and cook 6 to 8 hours on low or 4 hours on high.
