Beef Enchilada Casserole

Ingredients

1 pound Ground beef

15 ounces Black beans

3 medium Tomatoes peeled and chopped

4 ounces Green chili diced

1 teaspoon Garlic powder

.75 teaspoon Onion powder

2 teaspoon Chili powder

2 teaspoon Ground cumin

1/2 teaspoon Salt

1/4 teaspoon Pepper

8 small Corn tortilla chips

8 ounces Cheddar cheese


Directions

Cook The night before cooking, move bag to refrigerator to thaw. The morning of cooking, carefully remove stack from bag and add to crockpot. Cover, and cook on “low” setting for 6-8 hours or until beef is cooked through. Slice like a pie and serve. (Mine cooked down like a casserole, so we used a spoon to serve.) Top with extra shredded cheddar cheese (optional).
