Mix ground beef with diced onion well.
Mold into 2 oz patties, season with the beef spice and sear on the flat grill.
Top each slider with caramelized onion and cheese. Store in the walk-in until ready to fire.
Cut the buns in half and keep the tops and bottoms on separate sheet pans. Keep tightly covered in plastic wrap until ready to fire.
When Ready to Fire:
Place the patties in the oven and roast until the cheese is melted and desired doneness is reached.
Toast the buns in the oven until golden brown.
To assemble: On the bottom half of the bun place the cooked patty with onions and cheese. Squeeze a little remoulade sauce on top of the patty and then top with the top half of the bun.
Serve hot.
