Berry Nut Pine Chicken Salad

Ingredients

3 tablespoons Red wine vinegar

2 tablespoons raspberry jam

1 teaspoon Dijon mustard

1/4 cup Olive oil

1/8 teaspoon Salt

1.8 teaspoon Black pepper

1/4 cup nuts pine, walnut or almonds

1 package salad mix

1 cup Blueberries

1 pound Boneless chicken breasts cooked and chopped

1/4 Red onion

8 ounces Sugar Snap Peas


Directions

For dressing combine vinegar, jam and mustard and mix well. Then add oil, salt, and pepper. Mix again and set to side. Toast nuts if using. Set aside. Chop off ends of snap peas and quickly stir fry 2-3 minutes and set aside. Then add red onion to pan and cook slightly. To serve, layer bowl with salad mix, snap peas, red onion, nuts, blueberries and chicken. Serve with dressing
