Cut meet into suitable sized strips.
Thoroughly rub with vinegar, ensuring that all the meat is coated.
Roast coriander seeds in a pan over medium heat. Mince coriander until fine.
Pack the meet in a suitable pan in layers - first sprinkle the bottom with salt and coriander, then a layer of meat followed by a salting and coriander etc.
Leave for 12 hours.
Turn the strips over and repack.
Leave for a further 6 hours.
Hang strips to dry in a cool fanned room x 3 -4 days depending on meat thickness.
