Black-eyed Pea Soup

Ingredients

2 cups Black-eyed peas, dried

8 cups Water

7 teaspoons Bouillon no-chicken broth

5 cloves Garlic use the jar stuff

2 Tbsp Oil

1/2 Cup Cilantro minced

2 Tbsp Parsley minced

to taste Salt and pepper

2 large Onions chopped

2 teaspoons Thyme

1 Bunch Scallions sliced

2 large Tomatoes chopped


Directions

1. Combine peas and water in Dutch oven. Add bouillon and garlic. Bring to boil. 2. Reduce heat, stir in oil, cilantro, parsley, salt and pepper. Cover and simmer 15 minutes. 3. Stir in onion, tomatoes, scallions, thyme. Cover, simmer 15-20 minutes. 4. Check peas and cook until done, maybe 20 more minutes.
