Blackberry Pudding

Ingredients

pn Salt

1 c Flour

1 1/4 c Sugar

1 ts Butter

1 ts Baking Powder

blackberries Sweetened

1/2 c milk


Directions

Cream 1/2 c sugar and butter; blend in flour, baking powder and salt. Stir in milk; pour into greased 8 x 8 inch baking dish. Cover with blackberries. Bake at 325 to 350 degrees for about 45 minutes. This is a great low-fat (only 1 tsp butter) dessert recipe. With fresh blackberries it is superb. With water-packed canned sour cherries, not as good. I reduced total sugar to 1 cup - 1/2 cup for dough, 1/2 cup to sprinkle over top. It might be just as good with only 1/4 to sprinkle over the top. I served it hot with no-fat vanilla yoghurt ice cream - spectacular!
