8 ounces bow-tie pasta cooked, rinsed, and drained
1 pint cherry tomatoes sliced in half
6 scallions thinly sliced
1 cup arugula leaves, or spinach leaves packed, torn into small pieces
8 thick cut smoked bacon cooked until very crisp
Dressing
1/3 cup EVOO
1 teaspoon Dijon mustard
2 teaspoon fresh lemon juice
3 tablespoons red wine vinegar
salt, to taste
pepper, to taste freshly ground
