Blue Cheese Beef Salad

A tasty way to use up left over cooked beef.

Ingredients

300 g cooked left-over beef cut into strips

2 cups lettuce (not iceberg) chopped

1/2 small lebanese cucumber halved and sliced

1 small red onion peeled and thinly sliced

1 tablespoon blue vein cheese crumbled

1 medium Roma tomato chopped

1/2 cup crumbled blue vein cheese

1/2 cup mayonnaise

1/2 cup light sour cream

1 teaspoon lemon juice

1/2 teaspoon hot Periperi sauce (hot red chili pepper sauce)

1/2 teaspoon Worcestershire sauce

1/2 teaspoon ground black pepper chopped

1 tablespoon parsley


Directions

Wash and finely chop the parsley. Combine all the ingredients for the blue cheese dressing and blend it into smooth sauce. Chop the lettuce, cucumber, tomato, onion and beef and toss them together. Add as much dressing as you wish to use and toss it through the salad. Sprinkle the crumbled blue vein cheese on top and serve.
