Broccoli Potatoes

Great and healthier form of mashed potatoes.

Ingredients

2 Russet potatoes peeled and quartered, or red potatoes

1 cup Broccoli peeled and sliced

1 clove Garlic minced

1 teaspoon Fresh Oregano chopped

1/2 cup Low-fat buttermilk

pinch salt and pepper to taste


Directions

In a large saucepan or stockpot, bring the potatoes and about 2 quarts water to boil over medium-high. Reduce heat and simmer, covered, for about 30 minutes. (Or you can steam the potatoes) Cook broccoli until soft, 10 minutes, and process until finely chopped. Combine teh potatoes with the broccoli in a large bowl. Add the garlic, oregano, and buttermilk and mash. Season to taste with salt and pepper and serve.

This was actually a very easy and tasty side dish! I left out the oregano, and used green onions instead. It made nice addition. I served it with a roasted pork loin, and glazed parsnips - thanks for posting!

Very simple yet delicious. I cooked the potatoes and broccoli in the same pot with the garlic and oregano. Since I had some shredded cheddar, I added that with the buttermilk before mashing. Will def make again.
