2 Russet potatoes peeled and quartered, or red potatoes
1 cup Broccoli peeled and sliced
1 clove Garlic minced
1 teaspoon Fresh Oregano chopped
1/2 cup Low-fat buttermilk
pinch salt and pepper to taste
This was actually a very easy and tasty side dish! I left out the oregano, and used green onions instead. It made nice addition. I served it with a roasted pork loin, and glazed parsnips - thanks for posting!
horror1031Very simple yet delicious. I cooked the potatoes and broccoli in the same pot with the garlic and oregano. Since I had some shredded cheddar, I added that with the buttermilk before mashing. Will def make again.
