1. Preheat oven to 350 degrees. Spray casserole dish** with non-stick spray.
2. In small bowl, combine brown sugar, ketchup and 1 tablespoon of Worcestershire sauce. Divide evenly among 3 separate bowls and set aside.
3. In large bowl, combine garlic, Worcestershire sauce, milk, eggs, salt, pepper, soup mix, ginger, bread crumbs, and one (1/3) bowl of he prepared brown sugar/ketchup mixture. Add ground beef, and mix to combine well.
4. Shape into loaf and spoon one bowl (1/3) of prepared brown sugar/ketchup mixture onto the top of the loaf. Place the meatloaf, brown sugar/ketchup side down, into meatloaf pan.**
5. Top the with the remaining (1/3) of prepared brown sugar/ketchup mix.**
6. Bake in preheated oven for 1 hour, until juices are clear or until thermometer inserted into the loaf reads 160 degrees F. Let stand 10 minutes before slicing.
**I prefer to use a meatloaf pan - in that case, divide the brown sugar/ketchup mixture as follows: 1/3 mix into meat/breadcrumb mixture as directed. The remaining 2/3 -- spread a few spoonfuls on the bottom of the meatloaf pan tray; place loaf onto tray; cover remaining top/side of meat loaf with rest of brown sugar/ketchup mixture.
