Browns Satay Chicken

Tasty and simple satay, great to reheat for lunches

Ingredients

2 tablespoons Oil

2 cups Rice cooked as per pack instructions

450 grams Chicken diced

1/3 cup Cashews lightly toasted

1 handful Fresh coriander roughly chopped

2 tablespoons Sweet chilli sauce

1 teaspoon Ginger finely grated

1 tablespoon Soy sauce

1 Lime juice only

1 clove Garlic crushed

1/2 cup Peanut butter

Salt & pepper to taste

1/2 can Coconut milk

1 head Broccoli cut into small florets

1 Onion diced

1 Capsicum diced


Directions

1. Combine chicken and sauce ingredients in a bowl, place in fridge to marinate for an hour 2. Heat canola oil in fry pan on med-high heat 3. Add onion, cook until just soft 4. Add chicken to pan and brown lightly 5. Add vegetables and simmer until vege's are cooked, stirring regularly 7. Stir in the cashew nuts & serve with the rice, sprinkle coriander over top
