Buffalo Chicken Mac and Cheese

Ingredients

1/2 lb macaroni (elbow, shells, whatever)

3 cups cooked shredded or chopped chicken

8 oz velvetta cubed

1 -10.75 oz condensed cheddar cheese soup

1 cup milk

1 cup shredded cheddar cheese

1 -packet (3/4oz) Ranch Dressing and Dip Mix

1/8 -1/2 cup hot sauce or to taste

sliced green onion (optional)

crumbled bleu cheese (optional)


Directions

1. Preheat oven to 350 degrees F. 2. Butter a 2 quart casserole dish; set aside. 3. Add pasta to boiling salted water, cook to al dente; drain well and add to casserole dish. 4. Stir in chicken. 5. Heat the Velveeta and soup together until cheese is melted. 6. Blend in the cheddar cheese and milk. 7. Stir in the Ranch dressing mix and hot sauce; pour over chicken and pasta and stir. 8. Bake, uncovered, at 350 degrees F for 30 to 35 minutes, or until heated through and bubbly. **Crumble the bleu cheese and sliced green onion on top for garnish** ENJOY!
