Combine ground chuck, onion, salt, thyme, and pepper in a medium bowl; stir well. Divide mixture into 12 thin patties. Combine cheeses, stirring well. Top 6 patties each with about 1 tablespoon cheese mixture. Top with remaining 6 patties, and seal.
Coat rack of a broiler pan with cooking spray. Place patties on rack in brolier pan. Broil patties 6 inches from heating element 4 minutes on each side or until desired doneness. Drain patties well on paper towels. Transfer to a warm serving platter.
