Buttermilk Cornmeal Waffles

Ingredients

2 egg yolks

1 1/2 cups buttermilk

3/4 cup sour cream

1 tsp baking soda

2 tablespoon cornmeal

1 cup flour

5 tablespoon melted butter

3 egg whites beaten until fluffy


Directions

Mix egg yolks, buttermilk and sour cream together. Add baking soda, cornmeal and flour. Add melted butter and mix. Finally, fold in the beaten egg whites gently, making sure not to stir too much.

The key to fluffy waffles is to avoid over-mixing! If you don''t have buttermilk, you can add 2T of white vinegar to 1 1/2 cups of whole milk and let it stand for 5 minutes. This will work just as well. [I posted this recipe.]
