Butterscotch Cookies

Ingredients

1 cup brown sugar packed

1/2 cup sugar

1 cup shortening butter flavored

2 eggs

1 teaspoon vanilla extract

2 1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon cinnamon

1 bag butterscotch chips 11 oz


Directions

Preheat convection oven to 325 degrees. In a large bowl, cream together the shortening, both sugars, vanilla extract and eggs one at a time. Hand mix until fluffy. In a medium bowl, whisk together the flour, baking soda, salt and cinnamon. Slowly add the dry ingredients to the wet ingredients. Mix until well blended. Add butterscotch chips. Mix well. Drop by spoonfuls on ungreased cookie sheet. Bake for about 12 minutes or until light golden brown. Let sit on baking sheet for 3-5 minutes then transfer to rack to cool.
