In a large bowl, cream together the shortening, both sugars, vanilla extract and eggs one at a time. Hand mix until fluffy.
In a medium bowl, whisk together the flour, baking soda, salt and cinnamon. Slowly add the dry ingredients to the wet ingredients. Mix until well blended. Add butterscotch chips. Mix well.
Drop by spoonfuls on ungreased cookie sheet. Bake for about 12 minutes or until light golden brown. Let sit on baking sheet for 3-5 minutes then transfer to rack to cool.
