Cabbage Salad & Fish or Tofu

Ingredients

1/8 Cabbage chopped

1 carrot grated

1 beetroot chopped

4 tbs fresh mint finely chopped

1 can Fish (in spring water)or Tofu sustainable fish!

2 tbs Extra virgin olive oil

1/2 Fresh lemon juice

1 tbs apple cider vinegar

1 tsp Dijon mustard

2 tbs cranberries

2 tsp Sesame seeds

1 pinch sea salt

1 pinch Black pepper


Directions

In a medium mixing bowl, put cabbage, carrot, beetroot, mint and fish or tofu. Add cranberiies and sesame seeds. In a covered bottle put all the salad dressing ingredients and mix until it becomes smooth Pour salad dressing onto salad and mix it until all absorbed. Put in the fridge for 10 minutes and mix again before you serve.
